On the sign:

Translation of the text on the sign:
Winepress for wine treading
The winepress in front of you was made by the people of the Roman-Byzantine city of Emmaus, which was located in the entrance area of the park. The grape crop was placed on the surfaces adjacent to the winepress. The grapes were trodden on foot across the mosaic floor of the upper winepress, and from there the grape juice flowed through the pipe to the lower winepress. For further squeezing, a hewn pit was used in the center of the treading floor. The squeezing operation was done with the help of a heavy stone weight that was specially adapted for the pit.
This elaborate winepress was used by many vineyards and was a kind of factory for wine production. The winepress characterizes the agricultural flowering of Israel in the Roman-Byzantine period.
