מתקנים להפקת שמן זית
גידול הזית והשמן שהופק ממנו היו ענף מרכזי בכלכלת תושבי הארץ בעת העתיקה. זיתים שימשו בעיקר להפקת שמן אך זיתים כבושים היו מרכיב חשוב בתפריט המזון. שמן זית שימש גם למאור ולתמרוקים. במרבית היישובים הקדומים נחשפים המתקנים להפקת שמן זית בבתי בד, שמוקמו בדרך כלל בשולי היישוב בבית הבד שימשו שני מתקנים נפרדים בשלבים העיקריים בהפקת השמן - מתקן הפריכה לריסוק ומתקן הכבישה (1) לסחיטה. תחילה רוסקו הזיתים במתקן הפריכה, לאחר נזכן נאסף הרסק בסלים והובא למכבש לצורך הפקת הנחל הצמחי, המוהל, שזרם ממנו לבור איגום, שבו לבסוף הופרד ממנו השמן.

Olive-Oil Production Installations
An important part of the country’s economy in ancient times was the cultivation of olives and the oil they produced. Although they were used mainly to manufacture oil, processed olives were an important dietary supplement and the oil was also used for cosmetics and as lamp fuel. Most ancient sites have yielded traces of olive oil presses, which are usually located on the outskirts of the settlement. Two separate mechanisms were used during the main steps of oil production in oil presses, one for crushing and the other for pressing (1). The olives were first placed in the crushing device, where the pulp was collected in baskets and brought to the press to extract the juice, which ran into a collecting vat where the oil was finally separated.
