מתקן הפריכה (הריסוק) – "ריחיים של זיתים’ (משנה זבים ד,ב) - מורכב משני חלקי אבן שבהם שולבו ציר ויצול מעץ; אבן תחתונה (1) - אגן הריסוק - שעליה הונחו הזיתים ואבן עליונה (2) - המרסק - דמוית גלגל, שריסקה את הזיתים. הפעלת המתקן התבצעה בכוח בהמה ולעתים גם בכוח אדם. ראשיתם של מתקנים מטיפוס זה כנראה בתקופה הפרסית (סוף המאה הד’ לפנה"ס).

Crushing Device

Crushing device - ’oll mill’ (Mishnah Zavim 4:3) - consisting of two stone sections combined with a wooden axis and a shaft: A lower stone - the crushing basin (1), on which the olives were placed and a rolling upper stone - the wheel shaped crusher (2) that rendered the olives into a pulp. It was powered by a draft animal or occasionally by human labor. This kind of device was probably first used in the Persian period (late fourth-century BCE).
