מתקני הכבישה

בתחילתו היה מתקן הכבישה לעצירת שמן פשוט וביתי באופיו.
הוא הורכב ממשטח כבישה (1), קורת עץ (2), משקולות (3) ובור איגום (4). על משטח הכבישה סודרו הסלים עם רסק הזיתים בערמה, זה על זה; מעליהם הונחה קורות עץ שלחצה אותם בכוח משקלה וסחטה מתוכם את המוהל, שזרם לבור האיגום (עוקה). קצה אחד של הקורה קובע בתוך גומחה בקיר, ועל הקצה האחר נתלו בחבל משקולות אבן כבדות, שהגביר את הלחץ. קורת בית הבד, המרשימה בממדיה היא המקור לשמו העברי של המתקן לייצור השמן (קורה=בד).

מתקן כבישה בורג בלחץ ישיר
מכבשי קורה ומשקולות שימשו בבתי בד בארץ ישראל בתקופות ההלניסטית והרומית. בשלהי התקופה הרומית וראשית התקופה הביזנטית (המאות הד’־הה’ לסה"נ) נכנסו לשימוש מכבשי בורג שנחשבו משוכללים יותר מבחינה טכנולוגית. במכבש הבורג בלחץ ישיר הופעל הלחץ על הסלים באמצעות בורג עץ, שהחליף את המשקולות במכבש הקורה.

Olive-Oil Production Installations
Screw Press
The first kinds of pressing devices used to produce simple olive oil for the home consisted of a presing basin (1) a wooden beam (2), weights (3), and a collecting vat (4). Baskets containing olive pulp were pilled up on the pressing basin; a wooden lever was placed across them, weighing them down and squeezing out the juice which flowed into a collecting vat. One end of the lever was slotted into a niche in the wall and ropes bearing heavy stone weights were hung on the other end to increase the pressure. The Hebrew word for an oil-production installation (bet bad) comes from the Hebrew for the massive crossbeam (bad).

Direct-Pressure Screw Press
Lever-and-weight presses were used for oil production in Eretz Israel in the Hellenistic and Roman periods. The Late Roman and early Byzantine periods (fourth-fifth centuries BCE) saw the advent of technologically superior screw presses. In a direct-pressure screw press, pressure is exerted on the baskets by means of a wooden screw instead of the weights used in the lever press.
